Stats Canada Study Demonstrates Environmental Impact of Meat Consumption

Statistics Canada recently released a study comparing spending on household foods and the production of greenhouse gas emissions. Not surprisingly, spending on meat products resulted in vast quantities of GHG emissions; beef alone accounted for 15% of GHG emissions produced as a result of household spending on food. Read the full details of the study here.

Subway Riders Get Educated!

Have you seen the ChooseVeg subway campaign ads? A group of concerned Canadian citizens, along with Mercy For Animals, has launched a provocative poster campaign on the Toronto subway system to get people thinking about their food choices in relation to animal suffering.

The poster series draws attention to the similarities between the animals we call "family" and the animals we call "dinner", and then exposes the shocking cruelty that Canadian animals raised for food face on today's factory farms. Keep your eyes posted the next time you're on the TTC, and watch the reactions of people around you!

How Many Vegetarians are There?

Finding statistics on the number of vegetarians in any given population is always a challenge, but now at least a bit easier thanks to a survey conducted by the Vegetarian Resource Group. They found that 3% of the US population (translating to 6 to 8 million people) are vegetarian. 1/3 of those people (or 1% of the total US population) were found to be vegan. Read more about the survey and how it was conducted in the Vegetarian Journal.

Nutrient of the Month

Packing a Punch with Protein

As vegetarians, one of the most common questions we hear is "Where do you get your protein?" Your first reaction is probably to roll your eyes, as the truth is that protein is so easy to consume, it's actually more difficult to not reach your protein requirements. But in all fairness, it's easy to understand why people are concerned about vegetarians getting enough protein. It maintains muscle tissue and bones, and blood cells. It's especially important to consume protein following a workout, as it plays an important role in building muscle mass.

So where can you find protein? Where can you not!? The strongest sources are lentils and beans, sprouts, nuts and seeds, and tofu. But protein is found in a wide variety of whole foods, including whole grains and vegetables. If you're consuming a well-rounded diet with a variety of foods from all four food groups (fruit, legumes, whole grains and vegetables), you should be meeting your protein requirements.

Recipe

Vegetarian Shepherd's Pie from The Festival of India

Lentils

 Source: Su-Lin

For base of pie
  • 1 1/4 cups brown lentils
  • 2 litres water
  • 2 tablespoons olive oil
  • 1 teaspoon yellow asafoetida powder
  • 1/4 teaspoon freshly ground black pepper
  • 1 cup celery
  • 1 cup diced home-made curd cheese (panir) from (2 litres) milk and pressed for 1/2 hour, or 200g shop-bought paneer cheese (optional - omit if vegan)
  • 5 tablespoons good quality tamari or soy sauce
For potato topping
  • 2 tablespoons butter or non-dairy alternative
  • 6 large baking potatoes, peeled and cubed
  • 1/2 cup soy milk or milk
  • 1 teaspoon salt
  • 2 tablespoons sour cream (optional - omit if vegan)
  • 3 tablespoons chopped fresh parsley
Boil the brown lentils and water in a heavy 6-litre/quart saucepan. Reduce to a simmer and cook until they become soft. Strain through a colander. Put the lentils aside and retain the liquid for use as a soup stock at a later date.

Meanwhile, boil the potato cubes in slightly salted water until they become soft. Drain and mash them until smooth. Add the butter, milk, salt, and sour cream if using, and mix well.

Heat the olive oil in a small, heavy pan until very hot. Add the asafoetida and pepper and saute momentarily. Add the celery bits and stir well; reduce the heat and braise the celery until soft, stirring occasionally. Remove from the heat. Mash the drained lentils until smooth.

If using, crumble the curd cheese in a bowl and add the soy sauce. Mix well. Combine this mixture with the mashed lentils and the braised seasoned celery bits. Spread this pie filling evenly in the bottom of an ovenproof casserole dish. Cover this with the mashed potatoes. Smooth the mashed potatoes and use a fork to mark the top with lines.

Bake in a very hot oven 230°C/450°F until the top is browned. Remove from the oven, sprinkle with fresh parsley, and serve hot.

Serves 6 to 8 people.
